Mini Desserts - a Hot New Trend for Prom

Mini desserts are one of the hottest trends for Proms and celebrations right now! These small servings of delicious indulgences will impress your guests. If you'd like to serve one of these trendy little sweet dishes at your Prom, Homecoming, Senior Dinner or Banquet, we've got some fun ideas and great mini dessert recipes to share with you!

Each of the mini dessert recipes below makes 12 servings. Multiply the ingredients to make the number of servings you'll need for your event.
Cherry Almond Macaroon Parfait Mini Desserts
These mini desserts look beautiful in the Carey Dish.
- 1 small box of vanilla pudding. You can use either instant or cooked, but cooked has a slightly creamier result.
- Cold milk
- 1 can cherry pie filling
- 1/4 teaspoon almond extract
- 6 macaroon, sugar or shortbread cookies, coarsely crumbled
Prepare the pudding as directed on the box. In a separate bowl combine the cherry pie filling and almond extract. Start with a layer of pudding in the bottom of the glass, sprinkle some cookie crumbs, then top with a spoonful of cherries, then another sprinkling of cookie crumbs.
Chocolate Raspberry Tart Mini Desserts
The Harper Dish is perfect for these devine little morsels of chocolatey goodness.
Crust:
- 1 cup of Chocolate graham crackers or chocolate cookie wafers, crumbled
- 3 Tablespoons butter or margarine, melted
- 2-3 Tablespoons honey
Mix ingredients well and place a small amount in the bottom of each dish. Pack down slightly.
Filling:
- 2 cups whipping cream (not whipped)
- 12 oz semi-sweet chocolate chips
- 2 Tablespoons cocoa powder
- 1/4 cup sugar
- 1 cup fresh raspberries
In a heavy saucepan bring cream to a gentle boil, reduce heat and simmer for 5 minutes, stirring constantly. Stir in chocolate chips, cocoa powder, and sugar. Stir until the mixture is smooth and silky. Pour chocolate mixture over crust. Chill for at least 2 hours. Top with fresh raspberries before serving.
Chocolate Praline Fantasy Mini Desserts
Serve these mini desserts in a stemmed party glass, like the Seraphina or a dessert dish like the Kennedy Dish.
- 1 cup chocolate wafer cookie crumbs
- 1/4 cup butter or margarine
- 2 Tablespoons of sugar
- 30 caramels
- 1/2 cup caramel ice cream topping
- 1/4 cup whipping cream or heavy cream
- 2 cups coarsely chopped pecans or pecan halves
- 3/4 cup semi-sweet chocolate chips
- 1/4 cup whipping cream
Melt butter in a microwaveable bowl, then add cookie crumbs and sugar. Mix thoroughly. Place a tablespoon of the crumb mixuture in the bottom of a dessert dish and press down lightly.
In a heavy saucepan, melt caramels and ice cream topping together over low heat until melted. Stir in 1/4 cup of whipping cream. Remove from heat and add the pecans. Spoon into desert dishes to about half full while still warm.
For the topping, in a small heavy saucepan, bring remaining whipping cream to a low simmer over low heat, stir in chocolate chips until melted and smooth. Drizzle chocolate sauce over the pecan mixture in the glass, to create a criss-cross pattern. Serve and amaze!
Banana Cream Delight Mini Desserts
The Lockwood Dish is perfect for these creamy, banana-pie like morsels.
Crust:
- 1 cup graham cracker crumbs
- 3 Tablespoons butter
- 2 Tablespoons sugar
Mix together and divide among the dishes. Press down lightly.
- 1 large box vanilla or banana pudding. You can use either instant or cooked, but the cooked type is creamier.
- Cold milk
- 5-6 bananas sliced
- 1 container whipped topping
Mix cracker crumbs, melted butter and sugar in a mixing bowl. Divide the crumb mixture equally between the 12 dishes., press down firmly in the bottom of each dish.
Put 5 slices of banana in the bottom of each dish. Make the pudding as directed on the box. Divide among the dishes and cover the bananas with pudding. Chill until set, at least one hour. Top with whipped topping and serve. Optional garnishes, a slice of banana, finely chopped walnuts, chocolate shavings, or a vanilla wafer.
